Wake me UP porridge

DAY 1 – BREAKFAST

WAKE ME UP PORRIDGE – SERVES 2

Ingredients

1 cup whole rolled oats

600ml unsweetened plant-based milk

1 small carrot grated

2 tbsp chia seeds

1 tsp maca powder

2 tsp turmeric powder

2 tbsp desiccated coconut

2 tbsp shelled hemp seeds

1 banana grated

2 tbsp golden sultana or goji berries

A pinch of saffron

Garnish

Handful fresh mint leaves

Method – to go over method

1. Place the whole oats, and milk in a saucepan and heat gently on medium flame for 3-4 minutes until you have a loose, milky porridge. Do not allow it to reach boiling point.

2. Turn off the heat, add chia seeds and mix well. Leave swell and let it cool for 2 minutes.

3. Add the turmeric powder, maca powder, half of the desiccated coconut and half of the shelled hemp seeds. Mix well.

4. Spoon into two bowls and sprinkle the remaining coconut, hemp seeds, goji berries or golden sultanas bananas, carrots on top before serving
